									Total acidity is the sum of titrable acidities when it is titrated to ph 7 against a standard alkaline solution. particular attention must be paid to the elimination of carbon dioxide (co2) as the pH of the wine is in the form of carbonic acid (co32-), so it is to be considered an interferent.
The method uses the ph-metre to define the end of the reaction.
