The package enables the determination of:
- Delphinidin-3-glucoside (De-3-gl)
- Cyanidin-3-glucoside (Cy-3-gl)
- Petunidin-3-glucoside (Pt-3-gl)
- Peonidin-3-glucoside (Po-3-gl)
- Malvidin-3-glucoside (Mv-3-gl)
- Peonidin-3-acetylglucoside (Po-3-acgl)
- Malvidin-3-acetylglucoside (Mv-3-acgl)
- Peonidin-3-cumarylglucoside (Po-3-cugl)
- Malvidin-3-cumarylglucoside (Mv-3-cugl)

Determination is carried out via separation in HPLC - DAD (diode array detector).

Anthocyans are the colouring pigments of red grapes. The anthocyan molecule is made up of two benzene rings united by an unsaturated oxygenated heterocycle.

When the lateral ring is in the heterosidic form (glycosylate) we have the class of molecules defined as anthocyanins that are far more stable than agliconic forms (anthocyanidins).

The Vassanelli Lab® Agribusiness Laboratory has conducted and developed several studies for the evaluation of wines deriving from single-grape varieties, focusing in particular on the verification of the relationship between acylate forms and other glycosides.
